Strozzapreti are the everyday pasta. They needed no eggs, which were kept aside for Sunday’s sfoglia, the sheet of egg pasta, or sold at market, and they needed no equipment: water, flour, a rolling pin and the hands of whoever was in the kitchen. They were made in half an hour while the sauce ticked along, and they were made quickly, because there was field work waiting.

Why they are called strozzapreti

There are many stories about the name and in Romagna all of them are welcome. The one most often told is of the azdora, the woman who ran the farmhouse kitchen, who rolled the pasta between her hands with the gesture of wringing a cloth and wished the priest would choke on that same pasta: the clergy collected tithes on the land and farming families were not overly fond of them. Another version says that priests, invited to lunch, ate them so greedily they risked choking. We shall never know which is true, but the slightly crooked shape and the gesture of the hands tell of a pasta born from peasant anger and good humour at the same time.

Just water and flour

Without eggs the dough behaves differently: it is hydrated with warm water, worked for ten minutes until smooth, and rested only briefly, just long enough to relax the gluten. The sheet is rolled thicker than an egg one, a good two millimetres, because the strozzaprete needs body to survive the pot. The rolling gesture is simple and takes three minutes to learn: a strip between the palms, the hands moving in opposite directions, the pasta twisting on itself. Then you snap it with your fingers every eight to ten centimetres. They are not supposed to match: the beauty of a strozzaprete is exactly its irregularity, which catches the sauce in its hollows.

The sausage and tomato sauce

A shape this rough asks for a sauce with character. Sausage crumbled and well browned, rosemary, white wine to cut the fat, tomato cooked gently for twenty-five minutes: it is a sauce you make while the pasta rests, and it needs no hours, unlike the ragù for tagliatelle. The spoonful of cream at the end is a modern liberty (which is why it is not in the list) that plenty of trattorie in the hills take without embarrassment: it softens the tomato and gives the plate a shine. If you prefer it without, a ladle of pasta water does the same job.

At the table

Strozzapreti are lifted into the pan, never through a colander, and tossed with the sauce for a minute. Parmesan grated at the last moment, freshly ground pepper, a glass of young Sangiovese. Method

  1. The dough

    Make a well with the flour and dissolve the salt in the warm water. Pour the water and the spoonful of olive oil into the middle a little at a time, drawing in the flour with a fork and then with your hands. Knead with the heel of your hand for 10 minutes: you want a smooth ball, firm but not hard.

  2. The rest

    Cover the dough with an upturned bowl and leave it for 20 minutes. The gluten relaxes and the sheet rolls out without springing back.

  3. Rolling the sfoglia

    With the rolling pin roll a sheet about 2 millimetres thick, thicker than an egg pasta sheet: the strozzaprete wants body. With a knife cut strips a centimetre and a half wide.

  4. Rolling them up

    Take a strip and rub it between your palms with your hands moving in opposite directions, as if wringing out a cloth: the pasta twists itself. Every eight to ten centimetres snap it off with your fingers and lay the piece on a floured tray. They are not meant to be identical.

  5. The sauce

    Chop the onion and soften it in the oil with the rosemary. Skin the sausage, crumble it into the pan and brown it properly until it takes colour. Pour in the wine, add the passata, season lightly and cook over gentle heat for 25 minutes, until the sauce is thick.

  6. Cooking

    Drop the strozzapreti into plenty of boiling salted water. They are thicker than tagliatelle and take five or six minutes: taste them, they should keep some bite. Lift them out with a slotted spoon straight into the pan of sauce.

  7. Finishing

    Toss for a minute over a high flame with a ladle of pasta water. If you like, off the heat you can add a spoonful of cream: it is not in the ingredients because the home version does without it. Serve with Parmesan and a grinding of pepper.

Are strozzapreti made with eggs?

No, the Romagna ones are only water, flour and salt. Some households add an egg white to make them more elastic, but the traditional recipe is the poor one, without eggs, born from saving the eggs to sell at market.

Which flour should I use for strozzapreti?

Type 00 is perfectly fine and it is what was always used. If you want a rougher pasta with more bite, mix half type 00 with half type 0 or fine semolina: it takes a little more water, so add an extra spoonful.

What are strozzapreti served with in Romagna?

With anything thick and full flavoured: ragù, sausage and tomato, mushrooms, or a seafood sauce on the coast. The shape holds hearty sauces well thanks to its uneven surface and the twist that traps the dressing.
